Delicious cookies you can make at home
Here leading health and nutrition coach Karen Cummings-Palmer gives us her recipe for her healthy spiced oatmeal cookies.
“As we’re spending more time at home, there is bound to be more snacking. It’s not about banning snacks all together – instead, try upping your snack game” Karen suggests.
“Try not to buy rubbish biscuits and make delicious oatmeal cookies at home instead. They are easy and super quick to make, you can add lots of spices that have health benefits, and baking is a great way to keep kids entertained!”
Makes about 6, feel free to go easy or as heavy on the spice as you like.
Ingredients
- 2 large cups of oats (preferably gluten-free) high in fibre, helps lower bad cholesterol
- 1 serving spoon of Coconut flour high in protein, low in carbs & slightly sweet
- A tablespoon of ground chia seeds rich in Omega 3 & fibre & protein (you can substitute coconut flour for spelt or quinoa flour)
- 1/2 Cup of raisins (you can use or mix with chopped dates) antioxidant-rich & a good source of bone supporting boron
- 2 eggs rich in B vitamins and bio-available protein
- A dessert spoon of Coconut Nectar a low GI natural sweetener Freshly ground nutmeg rich in potassium, calcium, manganese
- A pinch of cinnamon anti-inflammatory, blood sugar balancing
- 3 or 4 teaspoons of ground ginger (according to taste) anti-bacterial A nob of butter & a pinch of Himalayan salt
Method
- Heat oven to 150c
- Mix all of the ingredients together in a bowl with a wooden spoon add a dash of water to help bind
- Spoon onto a baking tray and mould into rounds or use a cookie cutter
- Bake for about 20 minutes or until lightly golden brown
- Eat warm and slightly soft or let cool and crisp on a wire cooler – enjoy!
